What is a Cinco de Mayo celebration without a margarita? In my opinion, not a great one! My friends and I love celebrating this holiday and we always do it with a margarita in our hand.
Though there are a lot of delicious margaritas out there, I found a recipe for one that I think everyone should try. This coconut mango margarita is absolutely amazing! The coconut water and the mango combine together and create an amazingly refreshing taste. It’s light and fruity but not overly sweet! It’s so great! And the best part (in my opinion) is that it masks the taste of tequila!

While I was hunting for some more delicious Cinco de Mayo recipes, I came across a vegetarian tamale recipe that sounds amazing! I haven’t had a tamale since long before I became a vegetarian and I’ve never made them so I’m really looking forward to giving it a shot!
There are a lot of steps that go into making tamales but I can’t imagine that they would require that much work if they weren’t worth it. My plan for the evening is to make as many of these as I can manage. I know I’ll be making them a bit in advance since Cinco de Mayo is on Saturday but the glory of tamales is that you can freeze them!

With Cinco de Mayo quickly approaching, I realized that I had no recipes for the party that I’m planning that evening. My friends and I always get together to celebrate Cinco de Mayo and this year it’s my turn to host the party. As I’ve told you before, most of my friends aren’t vegetarians but I decided that I was going to cook an entirely vegetarian meal.
Salsa is absolutely amazing and I plan on making several different batches: hot, mild, black bean and corn, and salsa verde. Salsa Verde is a new one for me so I went on the hunt for a recipe that looked easy enough but that could also be made in large batches cost effectively, and I found one!
This salsa verde recipe by Food Network is so delicious! I tried to make a small serving of it and it was amazing! Any salsa lover is going to enjoy this recipe!
The weather is heating up and school is almost over! Summer time is almost here and with that comes grilling season… Luckily, just because you’re a vegetarian (or vegan) doesn’t mean that you have to miss out! When I started eating vegetarian, I thought I would really miss BBQ. I used to love grilled chicken coated in barbeque sauce. Obviously, chicken is no longer something that I eat and surprisingly, vegetarian barbeque sauce is a lot harder to find than you’d think. Because of this, I went in search for a homemade barbeque sauce recipe and found a great one!
This sauce is extremely easy to make and tastes good on everything! I’m really looking forward to breaking out the grill this weekend and making some delicious grilled tofu coated in BBQ sauce! Not only does this taste great on tofu but it tastes great on veggies as well. Even if you aren’t a vegetarian, this sauce is sure to please!
If you’re concerned about mad cow disease, I have a solution! If you’re craving a burger, make it a veggie burger! They are just as delicious if not more so and you won’t die from eating one! And to top it all off, I have a great veggie burger recipe that is so simple and super tasty!
I know veggie burgers scare a lot of people off but they are so delicious! I’m not the only one who thinks this particular recipe is great either! And the other person that approves of this burger isn’t even a vegetarian! So, give it a shot, you may find out that you like it just as much if not more as your regular old beef burger!
The Vegetarian Times article that I posted earlier also says that watercress has a lot of detox value so, I made myself some watercress soup.
This is the first time that I’ve had watercress soup and I was pleasantly surprised! Watercress has a slightly spicy taste similar to that of a radish. It is a lot less bitter than a radish, however. The combination of the cream and the watercress tames the spice just slightly. This soup is amazing and perfect for a spring day!
Oh, and one other note about this soup… watercress smells amazing when it’s being cooked! I was extremely surprised by the pleasant aroma!
Okay, so I found a recipe that used the detox veggies that I absolutely love! I tried it this afternoon and fell in love! At first I was a little skeptical to try Asparagus with Orange Sauce because I was a little unsure of how the two flavors would work together. I didn’t think that asparagus would taste well with orange over it.
I was wrong! This dish is incredible! The orange gives this a very nice, light citrus flavor. I really liked the creamy sauce over the asparagus. Usually I just put some olive oil and pepper on my asparagus and call it good but I’m really happy that I gave this a try. I really enjoyed this recipe and I’m sure you will too!
I’ve been getting a bit bored in the kitchen lately. I feel like I’m not trying anything new and I just make the same meals over and over and over again. So, I’ve decided to try to get out of this kitchen rut that I’m in. I’ve decided that I’m going to try to cook with flowers!
Most of the time when I see flowers in a dish, it’s just something that’s been tossed into a salad or added as a garnish but Vegetarian Times has made a list of edible flowers and some more exciting recipe ideas. There are a lot of flowers on this recipe that I didn’t realize were edible. Wondering about the flavor of some of these flowers? Well, you’re in luck because Vegetarian Times has included all of that information as well!
I saw on the list that sunflowers taste somewhat “artichokey”. I think I’m going to experiment and make some spinach dip and use sunflower instead of artichoke. I’ll let you know how it is! If anyone else has any experimentation ideas, let me know! I’m in dire need of some new recipe ideas!
As I said in my previous post, I love beets! After getting super excited about the prospect of having beets in the house this weekend, I started looking up beet recipes. Most of the recipes want you to destroy the beet and mask its flavor with things that are much more potent than the beet itself (which is pretty difficult to do) but after a lot of searching, I found a recipe that sounds amazing! It has two of my favorite things: beets and cheese!
This recipe for Roasted Beets with Feta not only sounds delicious but it is going to be super easy to make! I’m really looking forward to cooking some this weekend. I’m thinking having this as a side to some eggplant parmesan or maybe just some pasta with cheese, garlic, and olive oil. Either way, this side dish is going to compliment it well and I can’t wait to try it!

After eating at River City Brewing Co. the other day, I’ve been craving Mac ‘N’ Cheese so I found a delicious recipe for Vegan Mac ‘N’ Cheese.
Not only is this recipe absolutely amazing but it’s super simple also. The recipe calls for broccoli and though it was delicious, the next time I make it, I plan on adding a few more veggies into the mix. I’m thinking some red and green peppers and maybe even an onion.
