Not only do I plan to cater to the vegetarians at my NCAA tournament watch party this weekend, but I want to be able to cater to those that are vegans also. Whether you’re a vegan, vegetarian, or none of the above, these two recipes are sure to be a slam dunk!
As I’ve said before, hummus is one of my favorite things in the world! I love everything about it! One of the greatest things about hummus is that you can put just about anything in it and it will taste great. Whether it’s green peppers, olives, spinach, etc. you can’t go wrong. Hatch Green Chile Hummus is one of the many examples of absolutely delicious hummus. Whether you serve this with vegan pita, carrots, celery, or just plop it on crunchy leaves of lettuce, it’s sure to please the stomachs of all of your guests this weekend.
Another delicious vegan finger food that will please everyone: Cashew Pesto Stuffed Mushrooms. I’m not a huge fan of mushrooms in general but with cashews and pesto, you can’t go wrong. These are extremely easy to make and they are so great. You can use any type of mushroom you’d like and it will add a different flavor to it all the time. Not only are these mushrooms vegetarian but they are vegan!
With the NCAA tournament semi-finals game coming up this weekend, I’ve been in desperate need of some finger food recipes. I want to have a little bit of everything so I went hunting for some quick and easy recipes and I found one that looks delicious.
Little Mexican Pizzas are not only the perfect size for what I was looking for but they are also vegetarian! A lot of my friends are not vegetarians so I have to try to please everyone and I think these will do the trick. Not to mention, this is a lot more exciting than just setting a veggie tray up on the table. I haven’t made them yet but I am really looking forward to this weekend so that I can give them a shot.

Although I ate at several fantastic restaurants while on my Spring Break, my absolute favorite was The Bee’s Knees in Augusta, GA. This is not only my favorite restaurant that I dined at while in Georgia but it may be one of my favorite restaurants in general.
The Bee’s Knees is a Tapas bar so we ordered several different dishes to share between two of us and they were all AMAZING! We started off with the Hummus which had red peppers in it. The dish was full of flavor and the pita was so warm and fresh. We then had the Mediterranean Olives and Bread which was so good! The dish was crispy and flavorful. My only complaint is that I wish the olives had been pitted. After that we moved right along to the Korean Nappa Roll which I was pleasantly surprised about. It was the one that I was looking forward to the least and it may have been my favorite of all the dishes. Everything that we had was amazing! The portions were a good size, the price was right, and the service and atmosphere were wonderful!
There are several reasons that I’d like to visit Augusta, GA again and The Bee’s Knees is definitely one of them!
While I was away enjoying my spring break with family, I came across two super delicious vegetarian restaurants in Augusta, GA. I had never been to Augusta before so I didn’t quite know what to expect but my Augusta expert led me to all the right places.
While we were there one day, we went to the Soy Noodle House and it was delicious! The portions were very generous, the price was fair, and the food and service were great! With every main course, you get to choose your meat product. They have several options for those that aren’t vegetarians and for those that are, you get a choice of grilled veggies, tofu, or tempeh. I thought all the different options were amazing and I will definitely go to the Soy Noodle House the next time I’m in Augusta, GA.
I was out of town this past week visiting family. My little brother and I are both vegetarians so we were looking for some restaurants that have vegetarian options. After looking online and not finding anything that sounded good, we all decided that we’d go to a Mexican restaurant. This seemed like a good option as we thought they would at least have bean burritos and cheese quesadillas.
We were pleasantly surprised to find that they had more than just those two items on their vegetarian menu. After deciding what we were going to have as our main dishes, my brother and I took a look at the sides that came with our meal. A side of beans and a side of Mexican Rice.
The Mexican Rice, however, had an asterisk by it. After searching the menu for several minutes, we found what the asterisk meant… the Mexican Rice was made with chicken broth. While that wouldn’t be a huge deal to a lot of people, it really bothered me. And apparently, I’m not the only one. How exactly is this vegetarian dish that I ordered vegetarian if it’s cooked with chicken broth?
Long story short, I now check, double-check, and triple-check everything before ordering so that I’m not surprised with a stomach ache later in the evening.
It’s about that time of year when everyone starts breaking out the grill. I’ve always had a hard time with this part of the year. I’ve never been to a BBQ that was vegetarian friendly. I’ve always had to bring my own food to throw on the grill or I would have to go hungry. If the BBQ was at my house, I would cater to those that aren’t vegetarians but I could never find anything that struck my fancy in the way of vegetarian meals on the grill. All that changed today when I found this recipe for California Grilled Veggie Sandwiches.

I love olives! I frequently find myself acting like a small child and putting them on my finger tips just to eat them off seconds later. They are delicious and it’s so much fun to get messy and act like a kid sometime. As much fun as I have playing with my food, I have even more fun eating it. Luckily, I found an amazing Vegetarian Muffaletta Sandwich Recipe that is so simple to make!
Not only is this sandwich delicious and simple to make but it requires no oven and no stove. If you want your sandwich warmed up, you can easily do that and it tastes just as amazing!
Zucchini is one of my favorite vegetables. It is a lot meatier than a lot of other veggies and it can be cooked with just about everything! I have a ton of it that I need to eat up so I went searching for a recipe that would be light but also filling and I found the perfect one!
This Zucchini Marinara Sub from Real Mom Kitchen looks delicious! I haven’t made it yet but that’s my plan in the next couple of days. It is simple, it looks delicious, and I can’t wait to try it. It’s starting to get warm outside and I really don’t like cooking with the oven of stove when it’s too hot. Luckily, you don’t always have to cook in order to dine on a delicious vegetarian meal. Because it’s been so hot and the last thing I want to do is turn on the oven or stove, I found some amazing Cucumber Sandwich Recipes.
The Cucumber Mint Tea Sandwiches are delicious and the mint adds a nice flavor. I thought that it may overpower the cucumber flavor but they balance nicely. These sandwiches are extremely light and refreshing and absolutely perfect on a hot day.
The second recipe on this page is for “Best Cucumber Sandwiches.” They are just as refreshing as the previous recipe but they are a much more traditional cucumber sandwich. The recipe calls for Worcestershire sauce but I omitted it as it contains anchovies. Even without the Worcestershire, these sandwiches were amazing!
Whichever recipe you choose, you won’t be disappointed. They are both easy, delicious, and perfect for a hot day!
When I first started eating a vegetarian diet, I was afraid that it meant I would have to give up some of my favorite fast food restaurants. I was right for the most part but luckily, my all-time favorite sandwich shop, Planet Sub, has a pretty large vegetarian menu.
I’ve tried all of the vegetarian options on their menu and I have yet to be disappointed. They all have a lot of flavor, they aren’t too dry, and most importantly they all have something different to offer. I can’t imagine any vegetarian walking out of Planet Sub hungry. They have so many different flavorful options and I love them all!
Though it is hard to choose my favorite out of all the great options, my top two are “The Planet Veggie” which offers two different cheeses and a lot of delicious and nutritious veggies and the “Tempeh Parmesan” which reminds me of my favorite sub growing up as a kid, the meatball sub. With all the choices, I’m sure you’ll all find a favorite of your own!
