I came across another delicious recipe that I wanted to share. Soba Noodles with Vegetables, Crispy Tofu, and Toasted Sesame Seeds!
This recipe is delicious on it’s own but my husband has an AMAZING sauce recipe that is perfect pairing with the soba noodles.
Spicy Peanut Garlic Sauce
1 cup coconut milk*
1/2 cup peanut butter
1 tablespoon minced garlic
1 tablespoon minced ginger
3-4 tablespoons soy sauce (add more to taste)
Sriracha hot sauce (add to taste)
1 teaspoon cumin
Put all ingredients in food processor and blend until smooth. Add more coconut milk for a thinner consistency, or more peanut butter for a thicker consistency.
*As a low-fat option, use fat free coconut milk or water
