Wonderful Pad Thai

I’ve never made Pad Thai before so I thought I’d give it a shot.  When I was hunting for some Pad Thai recipes, I came across one from Andrea’s Easy Vegan Cooking that looks delicious!

This Pad Thai recipe is simple, quick, and delicious!  I modified the recipe slightly by removing the raw onions that are sprinkled on top at the end.  I love onions when they’re cooked but I can’t stand them when they are raw.  I don’t know if it’s the flavor, the smell, or something else but I can’t eat them.  Whether you remove the raw onions or leave them on, this recipe is sure to put a smile on everyone’s face!

Soba Noodles with Tofu and Toasted Sesame Seeds

I came across another delicious recipe that I wanted to share.  Soba Noodles with Vegetables, Crispy Tofu, and Toasted Sesame Seeds!

This recipe is delicious on it’s own but my husband has an AMAZING sauce recipe that is perfect pairing with the soba noodles.

Spicy Peanut Garlic Sauce


1 cup coconut milk*

1/2 cup peanut butter

1 tablespoon minced garlic

1 tablespoon minced ginger

3-4 tablespoons soy sauce (add more to taste)

Sriracha hot sauce (add to taste)

1 teaspoon cumin


Put all ingredients in food processor and blend until smooth.  Add more coconut milk for a thinner consistency, or more peanut butter for a thicker consistency.

*As a low-fat option, use fat free coconut milk or water

Wintertime Spring Rolls

Earlier today I was thinking about how delicious spring rolls sounded and decided that I should make some.  I’ve never made spring rolls before but while hunting for a vegetarian spring roll recipe, I came across one that looks and sounds delicious!

101 Cookbooks is full of delicious recipes and I am really looking forward to giving this one a try!  Tofu, ginger, garlic, and mushrooms!  Yum!  I’m off to enjoy this recipe and I hope you all enjoy it too!

Thai Smile Will Make You Smile

If you’re looking for a good Thai restaurant in Wichita that also caters to vegetarians, look no further!  Thai Smile is delicious and extremely vegetarian friendly!

There are several different meals on the menu at Thai Smile and in every one you get to choose your meat… tofu is an option on all of these meals.  If you’re not a fan of tofu, they also offer stir fried veggies in place of the meat.  Either way, you win!

Everything that I’ve eaten here has been excellent!  My favorite is the “Garlic Stir-Fried.”  They also have delicious “Basil Fried Rice!”  They use jasmine rice and it is absolutely to die for!  If you live in Wichita or are just passing through, you should definitely check out Thai Smile!

Creme Brulee!

Crème Brûlée… the most delicious dessert ever and also the most frustrating to type out!  Seriously, you should try it…

While Crème Brûlée is my favorite dessert EVER, it is also the most difficult dessert that I have ever tried to make.  There are several steps, a lot of waiting, and then comes the torch.  The torch is a ton of fun to use but it does take some time and effort to get it right.  I know not everyone has a torch but the custard that is underneath the delicious hard sugar shell is just as amazing by itself.  So torch or not, you should check out this Crème Brûlée recipe from The Pioneer Woman.

Eggplant.  It’s delicious, meaty, and extremely underrated!  It is by far one of my favorite vegetables and it also happens to be one of the most filling.  It’s delicious year round and I love cooking with it!

While out looking for a recipe that I could use eggplant in that was something other than Eggplant Parmesan,  I came across this recipe that looks absolutely delicious!  Ratatouille!  I haven’t had time to make it yet but it will definitely be something that I cook in the near future!  If you get a chance to make it, let me know how it is!

Yellow Tomato Bisque

If you’re looking for a light lunch or dinner option, look no further!

Tomato Bisque is one of my favorite soups and I eat it year round.  I love it’s taste, I like the texture, I love that it’s filling without being overly so, and I love that it isn’t super rich like a lot of bisques are.  When I think of Tomato Bisque I imagine a light red color but I found an awesome recipe from Fine Cooking that calls for yellow tomatoes. Grilled Yellow Tomato Bisque tastes just as delicious as the tomato bisque with red tomatoes but the yellow tomatoes make it so pretty!

The grilled tomatoes give this recipe a delicious earthy flavor that I love!  I hope you all find this recipe to be as delicious as I think it is! Let me know what you think!

Breakfast Crepe

I don’t know about you but I have to start my day off with a delicious breakfast.  I don’t have a lot of time throughout my day for extravagant meals so I try to make breakfast special every day.  Crepes are delicious any time of the day but they are perfect for breakfast.  The crepe itself is so light that it leaves room for the good stuff!  Cheese and Veggies!

Crepes are extremely difficult to master but I’ve found a very simple and tasty recipe that I hope you all enjoy! These crepes can be filled with just about anything but I found a delicious crepe filling recipe from Life 2 Share that I had to share with you all!  It combines spinach, onions, and mushrooms and it tastes WONDERFUL!  The only minor change that I made is that I included cheese in my filling!  (I love cheese and put it on everything!)

I know it’s a lot of work first thing in the morning but it’s SO worth it!  The day is much more enjoyable if you start it off with a happy belly!

Lotus Leaf Cafe

If you’re looking to dine out in the Wichita, KS area, I recommend checking out the Lotus Leaf Cafe. 

In my opinion, Lotus Leaf Cafe isn’t the best vegetarian restaurant in Wichita but it is pretty good.  The first time I went in, I didn’t enjoy it all that much.  I thought the food was dry and the service was lacking but they have since undergone some changes in management.  I went again just a little over a month ago and I found the food and service to be much better than it was the first time I went.

The menu had changed quite a bit and the food was delicious!  I had the “Veggie Panini” and it was excellent!  The bread comes from a  local bakery and it is some of the best bread that I have ever tasted!  Needless to say, if you are a vegetarian in the Wichita area, you can’t go wrong with the Lotus Leaf Cafe!

Excellent Biscotti Recipe

I was looking for something sweet and delicious to make and figured I’d stick with the Italian theme of my last two posts.  Why not make an entire Italian meal?

This recipe is a little bit more difficult than the last two that I posted but it is well worth the effort!  Biscotti is one of my favorite desserts and this one is one of the most delicious and interesting biscotti recipes that I’ve found.  It’s sweet without being overly sweet and it’s got a great nutty flavor from the almonds.
